Ingredients
- 30 ml (2 tbsp) olive oil
- 2 litres (8 cups) mixed vegetables (broccoli, cauliflower, Brussels sprouts, squash, sweet potatoes, mushrooms, zucchini, green beans, bell peppers, etc.)
- Salt and pepper
- 180 g (6 oz) Oka Original, cubed OR 1 small (190 g) Oka Original, cut into 12 wedges
- 45 ml (3 tbsp) honey
- 15 ml (1 tbsp) sriracha sauce
- Fresh basil leaves, torn (to taste)
Preparation
- Preheat oven to 425°F (210°C).
- Toss vegetables with oil, salt, and pepper in a baking dish. Roast for 20 minutes.
- Mix honey and sriracha in a small bowl.
- Add half the spicy honey to vegetables, stir, and roast another 10 minutes or until desired doneness.
- Set oven to broil.
- Stir vegetables, top with cheese, and broil for about 2 minutes until melted and golden.
- Drizzle with remaining spicy honey and garnish with basil. Serve.
