Roasted Vegetables with OKA and Spicy Honey
Ingredients
  • 30 ml (2 tbsp) olive oil
  • 2 litres (8 cups) mixed vegetables (broccoli, cauliflower, Brussels sprouts, squash, sweet potatoes, mushrooms, zucchini, green beans, bell peppers, etc.)
  • Salt and pepper
  • 180 g (6 oz) Oka Original, cubed OR 1 small (190 g) Oka Original, cut into 12 wedges
  • 45 ml (3 tbsp) honey
  • 15 ml (1 tbsp) sriracha sauce
  • Fresh basil leaves, torn (to taste)

Preparation
  1. Preheat oven to 425°F (210°C).
  2. Toss vegetables with oil, salt, and pepper in a baking dish. Roast for 20 minutes.
  3. Mix honey and sriracha in a small bowl.
  4. Add half the spicy honey to vegetables, stir, and roast another 10 minutes or until desired doneness.
  5. Set oven to broil.
  6. Stir vegetables, top with cheese, and broil for about 2 minutes until melted and golden.
  7. Drizzle with remaining spicy honey and garnish with basil. Serve.
