Apple and Rhubarb Crisp with OKA Apple Cheese
Ingredients
  • 1 ml (1/4 tsp) cinnamon
  • 30 ml (2 tbsp) brown sugar
  • 15 ml (1 tbsp) cornstarch
  • 4 McIntosh apples, peeled and diced
  • 375 ml (1 ½ cups) diced rhubarb*
  • 375 ml (1 ½ cups) quick-cooking oats
  • 180 ml (3/4 cup) brown sugar
  • 60 ml (1/4 cup) unbleached all-purpose flour
  • 1/2 pack (190 g) Oka Apple cheese, grated
  • 60 ml (1/4 cup) melted butter

Preparation
  1. Preheat oven to 350°F (180°C).
  2. In a large bowl, mix the cinnamon, 30 ml (2 tbsp) of brown sugar, and cornstarch.
  3. Add the fruit, toss to coat well, and transfer to a 23 cm (9 in) square or round oven-safe baking dish.
  4. Reuse the large bowl to combine oats, brown sugar, flour, and grated cheese. Add the melted butter, mix well, and spread over the fruit. Press down lightly.
  5. Bake for 45 minutes or until the fruit is tender and the topping is golden brown.
  6. Serve warm or cold.
